Watermelon Cucumber Mint Salad (GF | V)

I love love love fruits, especially seasonal fruits! I really believe that they are nature's candy and eating them just genuinely makes me so happy. Watermelon season has just started for us, and my dad and I just brought home the first watermelon of the year. Yes, we did the watermelon tapping in the middle of Costco to listen for the juiciest watermelon. We didn't quite know what each sound meant or which sound we were looking for... but we ended up in a fit of laughter as we randomly chose a watermelon that seemed dark green... and lucky for us it was SO juicy! (If you have watermelon choosing tips, please teach me!)



We also have mint growing in our backyard rather fiercely, each summer conquering more land than the year before. But I am not complaining... it's one of my favorite herbs of all time and I love incorporating in literally everything.


This fruit salad is so so so simple and quick to make (5 minutes max) but the combination of the flavors will leave you shook. It is so refreshing, making it the ideal snack for a hot sunny summer day. For me, this was my refueling snack that I quickly threw together almost everyday on my study breaks during midterm season.



 

the dEATS:


Ingredients

  • chopped Watermelon

  • diced Cucumber

  • Fresh Mint Leaves

  • Crumbled Feta

  • Lemon Juice

  • Salt & Pepper

  • OPTIONAL: TJ Chili Lime seasoning for an extra kick ;)

The Magic:

1. Combine watermelon, cucumber, and mint leaves in a bowl

2. Add some crumbled feta, salt, pepper, and lemon juice!

3. Toss and enjoy(:
