PB & Chocolate No Bake Granola Bars(GF | V)

Granola bars are my favorite grab and go kind of snack, especially amidst busy weekdays. Going grocery shopping, I noticed that a lot of my favorite chocolatey granola bars are actually filled with ingredients that I can't even pronounce. All these chemicals, artificial flavoring, and high levels of sugar are red flags for me.
So, I did what I do best and I made my own version :)
Yes, once again this recipe is Gluten Free, Vegan, Oil Free, and Refined Sugar Free... and involves Oats (ofcourse) !!

These were super quick and easy to make. All you have to do is some measuring and mixing and then the fridge does the rest of the job. These are perfect for preparing on a Sunday and having them ready throughout the week.
Low calorie, and with ingredients you can trust, you will be indulging in something peanutty and chocolatey while treating your body right.
**** I recently discovered the PBfit powder and found it perfect for this recipe since it incorporated a bit of protein in, was low calorie, and runny enough to mix in with the dry ingredients. You can definitely use regular peanut butter for this recipe but just keep in mind that then the calorie count I have included below for you will not be accurate****
the dEATS:
14 bars, 117 calories each
Ingredients
2 cups rolled oats
1 cup puffed rice
1 1/4 cup PBfit Powder (or 3/4 cup peanut butter)
3/4 cup water (if you are just using peanut butter, do not add water!)
1/4 cup agave/honey
1 tsp cinnamon
3 tablespoons chocolate chips (dairy-free choc chips for vegan sub)
CHOCOLATE DRIZZLE
1 tbsp unsweetened cocoa powder
1 tbsp sugar (or sugar substitute like Lakanto Monkfruit Sweetener)
1 tbsp hot water
The Magic:
Mix together the oats, puffed rice, chocolate chips and cinnamon
In a separate bowl, mix the PBfit powder and water. (If you are using regular peanut butter, then do not add water. Simply use 3/4 cup peanut butter)
Add the PB mixture and the agave to the dry ingredients
Mix everything together well
Press mixture down well into a baking dish lined with greased parchment paper
Make sure you press down firmly so that the bars form properly (I covered the mixture with another greased parchment paper and used a cup to press down)
Leave the dish in the fridge to cool for at least 2 hours
After the dish has cooled, cut into bars
For the chocolate drizzle, mix together all the ingredients and drizzle over the bars
Let cool for some more time and enjoy!!!
