Orange-Cran Granola (GF | V)

Here is another OIL-FREE, REFINED SUGAR FREE, GLUTEN FREE, VEGAN recipe for you all, with rolled oats. (These clearly are my favorite types of recipes)
I love making homemade granola because I can control exactly what goes in it. No extra sugar, no preservatives and no random chemicals that I do not know how to pronounce. Plus, making homemade granola is super quick and easy and always leaves the house smelling amazing :-)
As the weather is getting warmer, I wanted something a little citrusy to top my yogurt bowls so I experimented with some tangy orange zest to create this tasty Orange-Cranberry Granola combination.
I tried my best to make the recipe as low calorie as possible while still incorporating in nuts and dried fruits, but feel free to add in any additional nuts or dried fruits that you enjoy!

Warning: This is VERY addictive. I cannot stop munching. I predict I will be making another batch of this next weekend.
P.S. I personally enjoy this best with some plain nonfat greek yogurt because it is already so flavorful that it just pairs perfectly with the subtle greek yogurt taste.
the dEATS: 20 servings (1/4 cup), 85 calories
Ingredients:
TO MIX
2 cup rolled oats
1 cup puffed rice
1/2 sliced almonds
1 tsp cinnamon
1/2 tsp salt
1/2 cup agave/honey/maple syrup
2 tsp fresh orange zest
TO ADD
1 tsp agave/honey/maple syrup
1/4 tsp orange zest
1/4 cup dried cranberries
The Magic:
Preheat oven to 350 degrees F
Combine together all the dry ingredients in a mixing bowl
Mix agave and orange zest together in a separate bowl
Add the agave+zest mixture to dry ingredients and mix well to ensure all the dry ingredients are coated with the wet ingredients
Spread mixture evenly across a baking sheet lined with greased parchment paper
Bake for about 18-20 minutes—- halfway through give it a stir and drizzle on the additional tsp of agave (DO NOT OVER BAKE, you don't want it to burn! Just let it become a golden color, it will still be a bit soggy/soft)
Let it sit out to cool for at least 30 minutes and then break into desired clusters (This is the most important step. It will become crunchy as it cools)
Add in the additional 1/4tsp of orange zest, and cranberries and mix well
Enjoy as a topping on literally everything or eat it by itself!
Store in an airtight jar for about 1-2 weeks!... Though I highly doubt that you won't be tempted to finish the whole jar before then :P
