Oil-Free Fudgy Brownies (GF | V)

I have a hard time saying no to anything chocolatey but I've recently been trying to stay away from refined-sugars, and other processed foods so I wanted to create something that I could indulge in without any guilt. They are probably THE FUDGIEST batch of brownies I have ever baked and I wake up in the morning excited to having a piece after dinner.

When I finally finished the last of my midterms yesterday I wanted to find a way to celebrate and what better way than brownies!?!? Drexel's quarter system makes midterm week(s) extremely exhausting and draining past few days, but it was so nice to dance around the kitchen and just experiment with a bunch of ingredients and hoped they tasted alright…
and they were delicious!!
Since they were Gluten Free, my mom also enjoyed eating them and is already hoping I bake a second batch soon.
When I texted my friends that the brownies are Oil Free/Gluten free/Vegan they were all completely shook all asked what on earth I did put in them….It is a super simple ingredient list with a bunch of pantry staples! ... and YES THEY HAVE OATS (my absolute favorite ingredient).

the dEATS:
Servings:
12 brownies, 134 cal each
Ingredients
DRY
1 cup rolled oats
3/4 cup cocoa powder
1 tsp baking soda
WET
1/2 cup almond milk (any milk will work)
1 1/2 cup apple sauce
1/3 cup peanut butter (any nut butter will work)
4 dates soaked in warm water for 10 mins
TOPPING
3 tbsp chocolate chips (dairy free chips for vegan sub)
The Magic:
Preheat oven to 350 deg F
Blend all the dry ingredients in a blender till it becomes uniform powder
Add in all the wet ingredients and blend to get a thick batter consistency
Grease a pan and pour the batter in
Top with chocolate chips
Bake for 45-50 minutes
Let cool for a bit and then enjoy(:
