Mini Parfait Granola Cups (GF | V)

These little cups are so freaking adorable that I feel bad taking a bite out of them. But once I do I have no regrets.

You can make these parfait cups in the weekend and just add on yogurt and fruit on weekday mornings. These are absolutely perfect for the sunny spring days and having them just puts me in a cheerful mood, ready to start my day.
They are so versatile, you can turn these into a chocolatey dessert by topping with your favorite nut butter and chocolate chips. Or, try adding the Dalgona Coffee mixture inside these cups! Just have fun with it :)

Servings:
8 cups
Ingredients
1 banana
¼ cup honey
1 tsp vanilla extract
1 tsp salt
1 tsp cinnamon
A dash of nutmeg
1.5 cups rolled oats
The Magic:
1. Mash the banana in a bowl
2. Add in all the ingredients except oats and mix well
3. Fold in the oats and keep mixing
4. Split the mixture into 8 muffin cups and use your fingers to mold mixture into a cup
5. Leave the muffin tray in the fridge for 1 hour
6. After an hour, bake the muffin cups in the oven for 25 minutes at 350 degrees F
7. After 25 minutes, let the cups cool for a few minutes
8. Add some Greek yogurt and top with your favorite fruits, nuts, chia seeds and honey
9. Enjoy and stay smiling (:
