3 Ingredient Cookies (GF | V)

The most important meal of the day for me is DESSERT. Even while on a calorie deficit, I try to incorporate something sweet for an after dinner treat everyday. I think it is so important to allow yourself to indulge in things you enjoy even while trying to reach certain fitness goals.


My Mom has recently gone gluten free due to health conditions, and so she is missing out on a lot of her favorite foods. I've been trying to recreate gluten-free versions that she can enjoy and I can safely say that this recipe has her approval<3333 I make half of my batch with walnuts and raisins mixed in just for her and she eats them during her midday chai break.

These are by the easiest cookies you can bake and yes, they involve my favorite ingredient of all time: OATS!!! You most likely have all of these ingredients sitting in your kitchen right now and they take about 5 minutes to prep together.

Servings:

14 cookies, 55cal each


Ingredients

  • 2 ripe bananas ⁣

  • 1 cup of rolled oats⁣

  • 1/4 cup of chocolate chips⁣

  • OPTIONAL: any other mixins you desire (walnuts, raisins, coconut, peanut butter)⁣


The Magic:

  1. Preheat oven to 350 degrees F

  2. Mash bananas in a big mixing bowl

  3. Fold in rolled oats, chocolate chips ⁣and any other mixins

  4. Mix it all together ("...and you know that its the best of both worlds" Hannah Montana reference)

  5. Line a baking pan with parchment paper and lightly grease

  6. Place 1 tbsp balls of the dough on the parchment paper and slightly flatten ⁣

  7. Bake for 18-20mins ⁣

  8. Enjoy with a glass of cold almond milk(:
