Mango Chicken with Cauli Rice (GF)

Warm weather = mangoes!!!!!


One of my fondest memories growing up at home, was me and my sister running down the stairs, rushing to the kitchen as soon as my dad returned home from the Indian grocery store to ask my Mom to cut up some mango for us. Being at home for quarantine, I am lucky to enjoy mangoes which taste so much sweeter when my Mom cuts them for me.


Ive been putting mango into literally everything (icecream, oats, chiapudding, salads) and thought I would incorporate it into dinner as well to create a sweet+spicy+salty+sour+everything in between flavor combo. ⁣This is one of.my favorite dishes to eat out at a Thai Restaurant, so I wanted to recreate it at home.

This recipe can easily be made vegetarian too! I cooked for the whole family this time (not just myself) and so I made a Tofu version of this for my Mom (just sub chicken for tofu).


The dish turned out absolutely amazing and maybe even better than what I have had at a restaurant 😜

the dEATS:

Servings:

4 servings, 290 cal per serving


Ingredients

  • 1lb chicken⁣

  • *2tbsp all purpose flour (oat flour is a great sub, or you can remove it completely)⁣

  • 1 ripe mango⁣

  • 1/2 green bell pepper ⁣

  • 1/2 green red pepper⁣

  • 1/2 white onion⁣

  • (Any other veggies your heart desires)⁣

THE SAUCE⁣

  • 3 tbsp ketchup⁣

  • 2 tbsp soy sauce⁣

  • 2 tbsp fish sauce⁣

  • 2 tbsp rice vinegar (apple cider is a sub)⁣

  • 2 tbsp chilli garlic paste⁣

  • 1 tbsp honey⁣


The Magic:

  1. Clean and dice the chicken breast⁣

  2. Mix chicken in a bowl w the all purpose flour⁣

  3. Slice mango, bell pepper, and onion⁣

  4. Stir fry the chicken in a pan w 1tbsp oil until done, set aside⁣

  5. Sauté green/red peppers and onion in a pan for 2-3 minutes, set aside⁣

  6. In a bowl, mix all the sauce ingredients together. (Adjust if you want it spicier or sweeter)⁣

  7. Add sauce to a pan and let it come to a boil⁣

  8. Add in cooked chicken, cooked veggies and mango slices⁣

  9. Mix well on medium heat for another 3-4 minutes⁣

  10. Serve with a bowl of white rice or cauliflower rice for a low carb option! ⁣

  11. Enjoy!(: ⁣

~~if you want your dish to be on the saucier side, add in 1/2 cup of water and 2 tsp of cornstarch when everything is cooking together~~⁣
