Anyone who knows me knows how much I absolutely LOVE fruit. I could incorporate fruit into every meal if I wanted to and that's exactly what I did here with this cake. Crafted entirely out of fruit, this 3 tiered beauty was an adventure to make.
It was recently a very special friend's birthday, and she did not want to eat a traditional cake... so I had to think of something a little different and this fruit cake made the perfect refreshing summertime treat to celebrate her 20th....( completely vegan, gluten-free, sugar-free, everything BUT fruit-free :P )

Amidst a very stressful two weeks of midterms, this project was something that let me really explore my creativity and I enjoyed every bit of the few hours it took to make it. Seeing my friend's reaction when I surprised her with the cake was absolutely priceless and made the whole experience even sweeter :')
Huge shoutout to my Mom for her help with this one... and for her supervision while I used a rather sharp and rather large knife to do some carving. She knows how injury-prone I am so this was much needed.... happy to confirm zero injuries after this creation lol

This was my first time making a "cake" of this sort, but it will definitely not be the last. I'm excited to take on some other shapes and designs in the future!
dEATS:
Ingredients:
a watermelon
any other fruit (I used red/green grapes, cherries, blueberries, kiwi)
mint leaves
THE MAGIC:
Enjoy this time lapse of me working on the cake. (my phone died at some point through but you can still see the process)
Cut the rinds off of the entire watermelon
Cut the oblong shaped melon into thirds
Designate the largest one to be the bottom tier, and the smallest to be the top.
Using 3 different sized plates or bowls you already have in your kitchen for shape, use as stencils to cut along the edges, trimming the tiers.
Stack your ties on top of each other and use skewers to keep them in place.
GO CRAZYYY decorating your cake with additional little fruits and berries, using toothpicks to keep them in place.
Keep refrigerated until ready to serve and then ENJOY!
This is amazing and I’ve never seen anything like it before! You’re so talented!
