Beet Hummus (V|GF)

I personally LOVE the flavor of beets, and they offer so many nutritional benefits. They are packed with essential nutrients, and are a great source fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. I have been incorporating them into so many dishes and since Mediterranean is one of my favorite cuisines, I thought I'd try adding it to some hummus.
For some extra vitamin C, I added in some Camu Camu powder, which also adds a unique flavor profile.
This healthy oil-free hummus is so versatile and can be used in so many different ways. It can be a quick snack as a dip with some pita chips or veggies, or as a topping for your salad, or even as a spread for a sandwich or wrap!

Ingredients
1 medium beet
1 cup chickpeas
1 tsp Camu Camu powder (optional)
2 cloves garlic
3 tbsp lemon juice
1 tbsp tahini
2 tbsp almond milk
Salt and pepper to taste
¼ tsp red chilli powder for an extra kick
THE MAGIC
Wash beet thoroughly and cook by steaming it with about enough water to cover it, for 25-30 minutes. It should be soft when pierced with a fork.
Process the cooked beet in the food processor so it is broken up a bit
Add in all the other ingredients to the food processor and process so that you get a creamy and consistent texture. If you want it to be creamier, add more almond milk.
Taste and adjust tahini/lemon/garlic/salt/pepper to taste!
