Banana Bread Baked Oats (GF | V)

Oil Free and Refined Sugar Free and easily made Vegan!! Yes yes yes, here is another recipe with my very favorite ingredient- Rolled Oats.
At home, anytime we have overripe bananas, my Mom always makes her famous rendition of "banana cake" (which of course has no set proportions or measurements yet still always ends up tasting delicious). But this time, for the first time in quarantine... I got to the riped bananas first and claimed them for my very own creation....
So, this past weekend I made Banana Bread Baked Oats for breakfast for my family. Before I could even get the pan out of the oven, the chocolatey-banana smell had brought everyone into the kitchen ready for a piece... I of course made them all wait till it cooled and I had a photoshoot with it!
This creation was an absolute hit here and I am sure it will be in your home as well. Super goooeeey and chocolateeey it really hits the spot... when in doubt... I promise you oats are always the answer!!

Servings:
16 pieces, 91 calories each
Ingredients
2 ripe bananas
2 cups rolled oats
2 tbsp Agave (honey or maple syrup can be subbed)
1 egg or 1 flax egg(vegan substitute)
1 cup almond milk
1.5 tsp cinnamon
1 tsp baking powder
2 tbsp chocolate chips (dairy free chocolate for vegan sub)
TOPPINGS
1 banana
1 tbsp chocolate chips (dairy free chocolate for vegan sub)
The Magic:
Preheat oven to 350 deg F
Mash 2 bananas in a bowl
Add in the agave and egg/flax egg and mix well
Mix in all the other ingredients till you get a uniform batter
Pour the batter into a greased baking dish
Top with 1 sliced banana and 1 tbsp chocolate chips
Bake for about 30 minutes
Let it cool for 5-6 minutes and enjoy(:
